This is how to make chicken with onions, french fries and olives on top in the moroccan way.

Ingredients

  • 1lb of chicken
  • 2 medium onions, chopped
  • 3 garlic cloves, crushed
  • 1 tsp of black pepper
  • 1 tsp of ground ginger (ginger powder)
  • 1 tsp of turmeric
  • 4 tsp cilantro
  • 4 tsp parsley
  • 1 tsp salt
  • 1 tsp of clarified butter
  • 1/2 to 1 oz olive oil
  • 1 preserved lemon
  • 2 oz Olives
  • 3 medium potatoes
  • 16 oz vegetable oil for french fries

How to prepare :

Brown the onions

In a pressure cooker, place first the onions and the chickens, olive oil, add garlic, cilantro, parsley, black peper, ground ginger, turmeric and half cup of water

stir all these things together till you get rid of water and the onions becomes brown.

Add clarified butter

Add the clarified butter and add water till it covers all ingredients.

Firmly close the pressure cooker and let it cook for about 15 mins

Prepare the french fries

peel the potatoes and slice them into uniform sticks (1/4 to 1/2 inch tick).

Soak them in water for about 30 minutes and let them drain afterwards

In a large deep pot, heat vegetable oil to 350F and put the french fries to cook for about 3 to 4 minutes

drain them in a hollow pot

Serve
