Moroccan bessara or crushed split pea is a famous dish served in morocco, it is very known across all regions especially in northern morocco.

Usually it is served in lunch with sardines in cold wheather

Bessara is very common due to its sheap price and easy way to make

Here is the ingredients needed to make the plate for around 4 persons

Ingredients

  • 1/2 lb split peas (250 g)
  • 34 oz of water (1 liter)
  • 1 tsp salt
  • 4 garlic cloves
  • 2 tsp cumin
  • 1 tsp turmeric
  • 2.5 oz of olive oil

Recipe

The cooking phase takes about 30 minutes, here is the steps to do it :

Wash the split pea

Purify the beans, wash well, then drain.

Pre cook

In a pot over medium heat, put the beans, garlic, water, salt, turmeric, cumin and 1.5oz of olive oil.

Close the pot and leave it over medium heat for 30 minutes.

When the beans become soft, remove the pot from the heat.

Crush the split pea

We leave the pot cool a little, then grind the thread with an electric blender.

Return the mixture to the pot and place it over medium heat, stirring, for 10 minutes, then remove from the heat.

Serve
