Ghoriba or Bahla as pronounced in dialect morocco is a traditional Moroccan cookie that comes in various flavors, it is served in celebrations, or as a sweet in the evening with a cup of tea.

It comes with multiple flavors like sesame, almond, or peanuts.This recipe is for almond ghoriba

Hereafter the ingredients :

Ingredients:

  • 125 g butter
  • 7 oz vegetable oil ( 200 ml)
  • 4,5 oz sugar (125 grams)
  • 0.25 oz Vanilla powder (8g)
  • 0.5 oz baking powder
  • 1 tsp salt
  • 2 oz roasted and finely chopped almonds (50 g)
  • 1 lb of white flour

How to prepare :

The dough

In a bowl, mix the butter and sugar well until we get a cream-like mixture, then add the vegetable oil gradually.

Add vanilla powder, salt and almonds and mix all together.

Gradually add baking powder and flour and mix with your hands until we get a soft, moist, moldable dough.

Prepare for the oven

Cover the baking tray with parchment paper or grease it with oil.

We shape the dough into medium-sized or small balls as preferred.

We put it in a preheated oven at a medium temperature of 350F (175C).

The fire should be lit from top till the cookis is cracked and turns gold, it takes about 12 minutes approximatively

then we light the fire from the bottom for about 8 minutes till it turns gold

Serve

Take it out from the oven tray and place it in a box or a in a plate like the article picture, be careful to not brake it while taking it out from the tray
