Moroccan traditional soup "harira" is a famous dish in Morocco that typically includes lentils,chickpeas,tomatoes and meat. it is a meal famously served during the holy month of ramadan in breakfast time, usually served with dates and Moroccan chebakia.

The Harira recipe is as the following:

Ingredients:

  • 1 stalk celery
  • 1 stalk parsley
  • 1 stalk cilantro
  • 2 teaspoon ginger
  • 2 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 2 teaspoon clarified butter(ghee)
  • 1 teaspoon salt (amount of salt depends on desire and health condition)
  • 2 tablespoon of sunflower oil
  • 1 big onion or 2 medium sized onions
  • 5 tomatoes of meduim size
  • 2 teaspoon of tomato paste (more can be added to get dark red color)
  • 5 to 6oz of chickpeas (soaked in water overnight and peeled if you like it that way)
  • 3oz lentils soaked in water (90g)
  • 2oz vermicelli (60 g)
  • 8 teaspoons white flour
  • 7oz stew beef meat (200 g)

How to prepare :

We chop celery, parsley, cilantro and onions and put them in a blender with 1/4 gallon (1 liter) of water Blend these ingerdients in a mixer for about 2 to three minutes until it becomes green and homogenous

Place the mixture in the pressure cooker, add 1/2 gallon of water (2 liters), spices(ginger,turmeric,black pepper and salt), meat, chickpeas, lentils, sunflower oil and the clarified butter .

Close the pressure cooker, and leave the pot over the fire for 30 minutes.

In parallel, remove tomatoes seeds and put it in a pot with 1 cup of water and place them over the fire for 15 minutes, then mexied it all together in a blender. Use the water in which the tomatoes was boiled on, if needed add some extra water to mix it well.

Add the crushed tomatoes in the pressure cooker and leave them over the heat for 20 minutes.

Now, We mix flour well with a cup of water in a bowl, we mix it well to avoid the formation of flour balls.

Add the flour mixture to the pot, stirring constantly under fire, then add the tomato paste fir about 10 min till it boils.

Finally, we add the vermicelli and stir for 5 minutes.
