How to make moroccan white bean - loubia
One popular Moroccan and in north africa in general is the white beans called in moroccan dialect "Loubia".
A flavorful white bean stew which can be found in every restraurant and is cheap to make Here's a basic recipe for Moroccan White Bean Stew:
Ingredients
- 1/2 lb of of white beans, soaked overnight and drained
- 1 medium onion, finely chopped
- 1 medium tomato, crushed
- 2 ounces olive oil
- 2/3 tsp cilantro
- 2/3 tsp parsley
- 3 crushed garlic,minced
- 2 tsp of black pepper
- 2 tsp of red pepper
- 2 tsp ground ginger
- 2 tsp turmeric
- 2 tsp of tomato paste
- 1 tsp salt
How to prepare :
let's see how we are going to prepare it, first we'll start with:
Brown the onion
In a pressure cooker, put onions, garlic, cilantro, parsley, red pepper, black pepper and olive oil and 1/2 cup of water.
You can also use a blender with these ingredients, put them all together and mix. Once finished put them back in the pressure cooker
Leave it to brown without closing the pressure cooker for 4 to 5 minutes or till you get ready of water.
Add the beans
Next, add the beans, crushed tomatoes and tomato paste.
Cover the ingredients with water in the pressure cooker and close it.
Left to cook
Put it down on medium heat for 20 to 30 minutes (depending on the quality of the beans).
After the cooking time has passed, we open the pressure cooker and taste if the beans are well cooked.
Serve
