Msemen is a traditional Moroccan flatbread that it is very loved by most moroccans. its flaky, layered and served with honey or cheese and a cup of tea

Here is the ingredients and the steps on how to make delicious msemen at home:

Ingredients:

Dough:

  • 1 lb white flour
  • 1/2 lbs fine semolina durum wheat flour
  • 1 tsp of salt
  • 1 tsp of sugar
  • 1/2 tsp dry yeast
  • Warm water

Folding Msmen ingredients

  • 1/2 lbs butter (200 g)
  • 7 oz vegetable oil (200 ml)
  • 1/2 lbs semolina (150 to 200 g)

Recipe :

I recommend to use the mixer machine to get fine folding msemen, if not available you can use your hands but it needs some effort to get good results

Prepare the dough

In the mixer machine bowl or in a bowl, put the white and wheat flour, salt, sugar and dry yeast.

Add in warm water until you get a cohesive dough. Knead the dough well and let it rest for at least 15 minutes.

We form the dough into small balls and let it rest a little 10 to 15 minutes. It will look like this:

Next, mix the butter and the vegetable oil in a bowl to use in baking.

We take a ball of dough, flatten it by hand, and spread it with butter and oil to take a circular shape, as in the picture below.

Sprinkle semolina and fold it into three layers like the picture below.

After that, we fold it into a square shape, spreading it with butter, oil, and semolina on each fold, and leave it to rest aside (picture below).

We do the same process for all balls.

Once done, place the frying pan over medium heat, spray the frying pan with oil.

We spread the semen and let it cook. After it browns on one side, we sprinkle oil and turn it over to brown on the other side till it becomes like the cover picture
